Thankful Thursday

I am very thankful for my wonderful husband. He has really been a great help to me. Lately he has really gone out of his way to help me around the house. Mainly cleaning up the dishes after dinner because it is one thing that I really don't like doing. Thank you, thank you, thank you!

Tickle me Tuesday

I was really trying to get a picture of this, but I could not get it just right from my car. On my way home today I saw a car who's liscense plate read Paid4. It really made me chuckle because Drew and I are currently taking Dave Ramesy's Financial Peace University and his philosophy is to pay for everything in cash (except for the house...other than that NO loans!) It was nice to see someone else wanting to not be in debt like society tells us to be!

Meal Planning Monday

Monday: Veggie Quesadillas and homemade salsa

Tuesday: Chicken Sausage and sweet potato fries

Wednesday: Chicken ravioli with asparagus and grilled artichokes

Thursday: Mini apple cheddar Meatloafs

1 Ib. Ground Turkey
1/4 panko bread crumbs
1 med. onion shredded
1 med. granny smith apple peeled and shredded
1 lg. egg lightly beaten
1 tsp. salt
3/4 tsp. pepper
1 1/4 cup shredded cheddar cheese

1. Preheat oven to 375. Gently combine ground turkey and next 6 ingredients and 1/2 a cup of cheddar cheese. Just until combined using hands. Spoon turkey mix into 12 lightly greased muffin cups.
2. Bake at 375 for 16 minutes, sprinkle with 3/4 cup cheese. Bake 5 minutes or until cheese is melted and a meat thermometer reads 165.

Saturday:
  • Breakfast: veggie omlets
  • Lunch: Chicken tender salad with homemade ranch
  • Dinner: Mission Trip Dinner at Church

Sunday:

  • Lunch: with the family
  • Dinner: Bertolli pasta bag, rolls and salad
