Dinner this week

It is time again for the weekly menu update. My goal is to get this list up on sunday nights and also to have my shopping for the week done on sundays. Unfortunately that did not happen last night. The menu for this week is...

Monday: Left overs from eating out this weekend.

Tuesday: Our favorite pasta/ easy pasta
2 cups of macaroni pasta
3 tbs extra virgin olive oil
2 cloves of garlic minced
3-4 roma tomatoes chopped
1/2 cup of chopped fresh basil
1/2 cup of cubed fresh mozzarella cheese

Cook the pasta according to the directions. While the pasta is cooking
in a skillet heat olive oil put in minced garlic and cook until fragrent.
Add the chopped tomatoes to olive oil and cook until soft, about 5
minutes. Drain the pasta and add to the skillet. Add basil and cheese.
I always play around with the measurements. I like alot of garlic so I
put in more garlic. If you like more of anything in there like cheese or
basil add it. You can't go wrong. Enjoy!

Wednesday: Dinner with the gates

Thursday: Chicken Cordon Blu with broccoli

Here's a new way to cook broccoli.
1 cup of frozen broccoli
2 tbs extra virgin olive oil
1 large clove of garlic (minced)
pinch of red pepper flakes
handful of fresh parmesan cheese (however much you like)

Heat olive oil in a skillet at medium high heat. Add minced garlic
and red pepper flakes. Once the oil is fragrant add frozen broccoli.
Cover and stir occasionally. Cook until broccoli is done (usually
about 5 minutes). Once the broccoli is done sprinkle with desired
amount of parmesan cheese.

Friday, Saturday, & Sunday: College Station for first game of the season!

Weekly menu

So I am trying to start something new...our weekly menu. I am planning on simply listing my ideas for dinner this week. Every sunday I hope to have a new post with our weekly menu. When I cook some of my favorite recipes, I will include them on here if you ever are in a rut and don't know what to cook then go ahead and make one of the tasty dishes. I am a food network junky so my goal is to also begin making more of the recipes that I see on TV and read in magazines and rate and review them for you. But currently I am in the process of cooking with what I have. A.K.A cleaning out the pantry and fridge. Drew and I are in the habit of buying food when we are utterly hungry. It's a bad decision all around, we spend more money and end up with lots of food that sounded good at the time, but then we never end up eating. So my goal the next few weeks is to take whats left in our pantry and freezer and turn it into dinners with substance. Now my husband likes hamburger helper which I have to say is not my favorite but I have to use it is in the pantry.

So here we go week 1!

August 24-30

Monday: Chicken Piccata with rice

Tuesday: Pork with apples and stuffing. (I got this recipe from a good friend and this makes a very good dinner. One of Drew's favorites).

Wednesday: Dinner with the Gates (most likely)

Thursday: Breakfast casserole with fruit (this is one of Drew's specialties!

Friday: Chili cheese hamburger helper and cornbread

Correction...This weekend we will be in Houston for a wedding

Saturday: Lunch- Grilled cheese sandwich with tomatoes and fruit
Dinner- Chicken cordon blu wtih broccoli or we will be with friends or family...the plan is still up in the air.

Sunday: Lunch- with one of our families
Dinner- Left overs

Well I hope you enjoy the pork chops if you have any recommendations for future dinners please let me know!

Have a great week and an awesome first day back students and teachers!
